A few miles north of Canton, Ohio, lies one of the most extraordinary and inventive facilities in North America: an illustrious, Tuscan-themed, 55-acre estate called Gervasi Vineyard. What started as a reasonably simple winery concept has now blossomed into the best wine, dine, and stay experience in the Northeast. And now, in 2018, Gervasi Vineyard is expanding yet again.
Being added to the “Gervasi Village” this year is a luxury boutique hotel and distillery, with construction well underway. The distillery is called The Still House, and the luxury boutique hotel is called The Casa.
The Still House will be a coffee house by day and a distillery at night. It will feature craft cocktails, a cigar lounge, and, of course, the coffee house. The building is an expansive, mission-style church structure that will feature an extensive line of craft spirits including those locally made. The distillery will open with wine barrel-aged bourbon, whiskey, vodka, gin, and brandy.
"We are proud to be one of the first wineries in Ohio to break into the craft distillery market," said Scott Swaldo, Owner and General Manager of GV Destinations. "There are very few distilleries in Ohio. This provides a great opportunity to expand the demographic into the millennial market, and broaden our appeal to consumers seeking a unique experience."
The Casa is located directly behind The Still House. The single-story hotel has 24 substantial and luxurious suites. The Casa will complement The Still House with the same décor, including off-white stucco with a dark roof, wood accents, and wrought iron. Guests will love with the Italian tile floors, rustic beams, and wood ceilings. The Casa will also offer an exercise facility for guests.
The guest suites at The Casa, much like those at The Villas, will offer high-end amenities and features, including king-sized beds, fireplaces, heated tile floors, heated towel bars, a covered veranda, access to a private courtyard and beautiful gardens, and grand showers.

Gervasi Vineyard also has two sizable event spaces that are perfect for high-end weddings, social functions, and corporate events: The Pavilion and Villa Grande. Guests are encouraged to stay overnight in one of the current lodging facilities: the Villas as mentioned earlier and The Farmhouse.
The winery, which is stunning in its own right, is state-of-the-art, and offers over 20 varieties of wine, including chardonnay, pinot grigio, riesling, rosé, pinot noir, zinfandel, cabernet sauvignon, dessert and port wine, and many more!
Gervasi Vineyard, which opened in 2010, has three restaurants on site: The Bistro, The Crush House, and The Piazza. All three Tuscan-themed restaurants are incredibly and immaculately constructed, and offer a wide variety of exquisite cuisines, from chickpea-crusted chicken breast to Saggio Miele Maiale to rosa maria pizza--these restaurants are a step above the rest!
It’s extremely rare for one business to be this ambitious. It's incredibly aspiring to run a vineyard, hotels, and three restaurants, especially when they’re all among the best in the state, and the addition of a distillery and a luxury boutique hotel will firmly put Gervasi Vineyard among the world’s best facilities.
